Poetica is the pinnacle of wines made at Southbrook, in all of their vintages. This powerful Chardonnay churns out caramel, toast, apple, lemon and cream on the nose. On the palate it is concentrated and elegant at the same time, with caramel, minerals and spice on the long, crisp finish. Pair it with a scallop and tarragon terrine or poached salmon.
