This is one of those dishes that, at first glance, seems too complicated for anyone other than a chef. Actually, it couldn’t be easier. The sweet flavour of the meat compliments the dish’s melt-in-your mouth texture. |

Available only from the winery. This Burgundy-inspired wine comes entirely from the family’s 1.62-hectare vineyard and was produced from the yield of just 6 French Troncais oak barrels. It shows remarkable finesse, notwithstanding the significant level of alcohol. Oak, while readily apparent, does not overpower the fine fruit and elegant balance on the palate.
