Wild Rice and Porcini Mushroom Stuffing

3/4 cup dried porcini mushrooms

3 onions, chopped

1 tsp dried thyme

1/4 tsp nutmeg

6 cups chicken broth

3 cups wild rice, rinsed and drained

3 Tbsp dry sherry

Method/Steps

1. In a bowl, pour 2 cups boiling water over porcini mushrooms. Let stand 20 minutes. Squeeze mushrooms gently to release grit, then lift from water. Finely chop mushrooms. Carefully pour soaking liquid through cheesecloth into another container. Add enough water to soaking liquid to make 1-1/2 cups. Discard grit.

2. In a large pan, combine onion, thyme, nutmeg and sherry; reduce slightly. Add 3/4 cup of the mushroom soaking liquid. Stir often over high heat until onions begin to brown, 10-15 minutes. Add remaining soaking liquid, mushrooms, broth and wild rice.

3. Bring to a boil. Allow to boil until rice is visible about the water level. Cover, reduce heat to low and simmer until rice is tender to the bite and beginning to split, about 1 hour. Drain. Season with salt to taste.
