Whole-Wheat Ginger Pancakes
Ingredients
1-1/3 cups all-purpose flour
1 cup whole-wheat flour
1/3 cup icing sugar
3 Tbsp minced crystallized ginger
1-1/2 tsps baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 cup apple cider
1 cup vanilla yogurt
2 eggs
2 Tbsp melted butter
Butter for frying
Method/Steps
1. In a large bowl, mix flours, sugar, ginger, baking soda, baking powder and cinnamon together. In a small bowl, beat apple cider, yogurt, eggs and melted butter together until blended.
2. In a lightly buttered pan set over medium-low heat, pour batter in 1/4-cup portions at least 3 inches apart. Cook until buttles form on tops of pancakes. Turn and cook until brown on bottom.


Wine and Spirits Match
Serve with plain maple syrup, apple-maple syrup or cherry-maple syup, and a cup of hot coffee imbued with a splash or amaretto liqueur.
