Whiskey Barbecue Sauce

Ingredients
1 onion, peeled and diced
4 cloves garlic, minced
1 cup (250 mL) whiskey
1/2 tsp (2 mL) ground black pepper
1/2 tbsp (7 mL) salt
2 cups (500 mL) ketchup
1/2 cup (125 mL) cider vinegar
3 tbsp (45 mL) Worcestershire sauce
1/2 cup (125 mL) packed brown sugar
1/2 tsp (2mL) hot pepper sauceMethod/Steps
1. In a large skillet over
medium heat, sweat onion and garlic. Deglaze with whiskey, reduce by half then
add black pepper, salt, ketchup, vinegar, Worcestershire sauce, brown sugar,
and hot pepper sauce.
2. Bring to a boil, then reduce heat to medium-low, and simmer for 30 minutes.
Cool and Puree with hand blender until smooth.
