Vegetable Stock
There's nothing like homemade stock. Yes, it takes hours to simmer, but the resulting flavour is unequalled. Here's my take on a classic. Feel free to add your own variations to it.
Ingredients
1/2 cup onions, chopped
2 Tbsp oil
a dash of white pepper
a dash of cayenne
1/2 tsp salt
3 sprigs parsley
1 bay leaf
2 sprigs thyme
1/4 cup each carrots, turnips, parsnips
2 cups celery, diced
cold water, enough to cover
Method/Steps
1. Sauté onions until translucent. Add all remaining ingredients to the pot. Bring to a boil. Reduce heat, and simmer for 1 1/2 hours.
2. Strain and chill. Freeze if not using within 3 days.
