Two Pear Soup
Feel free to substitute your favourite type of pear in this exotic combination.
Ingredients
Red Prickly Pear Soup
5 lbs prickly pears, peeled and chopped
1/3 cup lemon juice
2 Tbsp sugar
Pear Soup
1 lb pears, chopped
1-1/2 cups sugar syrup (recipe follows)
1 star anise, or 1 tsp anise seed
1/4 cup lemon juice
Sugar Syrup
1/2 cup sugar
1-1/2 cups waterMethod/Steps
Sugar Syrup
Bring sugar and water to a boil. Simmer until sugar is dissolved. This sugar and water ratio will produce a lightly sweet-tasting syrup. You should add more sugar if you’d prefer it to be sweeter, or if the pears are very tart.
Red Prickly Pear Soup
Purée prickly pear in a blender or food processor. Add lemon juice and sugar. Serve, or cover and chill up to one day. Stir before using.
Pear Soup
Simmer pears and star anise in sugar syrup until tender, about 10 minutes. Let cool. Remove star anise. Drain pears, reserving sugar syrup. In a food processor or blender, purée pears, adding sugar syrup only as needed. Add lemon juice. Serve, or cover and chill up to one day. Stir before serving.
