2 Tbsp olive oil

1 onion, chopped

1 garlic clove, minced

3/4 cup cooked ham, chopped

4 carrots, chopped

2 celery stalks, chopped

1 zucchini, chopped

4 cups turkey stock

28 oz plum tomatoes, coarsely chopped

2 cups cabbage, shredded

2 cups cooked turkey, chopped

14 oz kidney beans, drained

1 cup green beans, chopped

2/3 cup small pasta

Salt

Pepper

Grated parmesan

Method/Steps

1. In a large saucepan, heat oil over medium heat; cook onion and garlic for 3 minutes.

2. Add ham, carrots, celery and zucchini; cook, stirring occasionally for 3 minutes. Add stock and tomatoes; bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes.

3. Add cabbage, turkey, kidney beans and green beans; bring to a boil. Reduce heat and simmer for 15 minutes or until vegetables are almost tender.

4. Add pasta; cook for 10 minutes or until tender. Season with salt and pepper. Sprinkle with parmesan.
