Turkey Cutlets in Shallot and Shiitake Mushroom Sauce
I’m encouraging Turkey Tuesdays, because I think the turkey people spent a lot of money on that Turkey Tuesday campaign. This recipe calls for shiitake mushrooms, but honestly you can use any mushrooms you like. I won’t get mad.

4 turkey cutlets
2 tbsp olive oil
4 small shallots, chopped
2 cups shiitake mushrooms, chopped
3/4 cup white wine
1 cup chicken broth
flour for dredging
Method/Steps
Preheat oven to 350˚F.
Dredge turkey in flour. Heat olive oil in skillet. Add turkey cutlets, cook two minutes per side. Place cutlets in baking pan and place in oven while you make the sauce.
In the same skillet, sauté shallots and mushrooms until shallots are golden and mushrooms are cooked. Add white wine, stirring up any browned bits. Add broth.
Bring to boil, lower heat and simmer 2 minutes. Pour sauce over turkey cutlets. Bake 10 minutes or until bubbly.
Serve with rice and broccoli.
