The Tropical Sparkler
Ingredients
2 (1/3 inch thick) pineapple slices, unpeeled
2 cups pineapple juice
1 to 1-1/2 bottles (750 ml each) sparkling wine
Method/Steps
1. Cut each pineapple slice into 6 wedges; then cut a 1/2 inch slice in each piece. Arrange fruit in a small dish. Pour juice into a pitcher to keep cold.
2. For each serving, pour about 1/4 cup of juice into a champagne flute. Fill with sparkling wine. Set fruit on glass rim.
