Tangerine Scented Rice
Ingredients
2 Tbsp olive oil
Reserved lamb marinade (from Tangerine Scented Crown Roast of Lamb), or use 3/4 cup more chicken stock
Chicken Stock, about 2-1/4 cups
1-1/2 cups basmati rice
10 oz frozen peas
1/2 cup green onions, thinly sliced
Method/Steps
1. Combine lamb marinade and chicken stock to make 3 cups.
2. Rinse rice in cool water until water runs clear; drain. Heat olive oil in a large pan. Add rice, and cook until rice begins to become translucent. Watch the rice carefully to make sure it doesn't burn. Add marinade mixture. Bring to a boil over high heat and cook, uncovered, until water evaporates to rice level. Reduce heat to low and cover pot. Cook for 20 minutes.
3. In another pan, sauté peas and green onions until warmed. Stir into rice.
