Sweet Potato Gratin
Ingredients
3 cups whipping cream
1/2 cup sugar
1 Tbsp orange peel, grated
1/2 tsp nutmeg, grated
1 tsp salt
2-1/2 lbs sweet potatoes
1 cup pecan halves
Method/Steps
1. In a large pan over medium-high heat, stir whipping cream, sugar, orange peel, nutmeg and salt until steaming, about 4 minutes.
2. Peel sweet potatoes. Slice crosswise very thinkly. Spread slices in an even layer in a buttered shallow casserole. Pour hot cream mixture evenly over sweet potatoes.
3. Bake in a 350°F oven for 30 minues. Remove from oven. Spoon liquid from the casserole edge over sweet potatoes to moisten them. Sprinkle with pecans. Return to oven and bake until browned and tender, about 30 minutes longer.
