Strawberry and Peach Soup
Ingredients
Strawberry Soup
1 cup Cabernet Sauvignon, or other red wine
1/2 tsp black peppercorns
6 cups strawberries, rinsed, drained and hulled
1/4 cup sugar
Peach Soup
1 lb peaches, chopped
3/4 cup orange juice
3 Tbsp lemon juice
2 Tbsp sugar
Method/Steps
Strawberry Soup
1. Bring wine and black peppercorns to a boil over high heat. Boil gently, uncovered, until wine is reduced to 1/2 cup; discard peppercorns.
2. In a food processor or blender, purée strawberries. Pour wine, purée and sugar into a fine strainer over a bowl. Rub purée into the bowl; discard seeds. Serve, or cover and chill up to the one day. Stir before serving.
Peach Soup
In a food processor or blender, purée peaches. Add a little of the orange juice at a time to thin the soup to the same consistency as the strawberry soup. Add lemon juice and sugar. Serve, or cover and chill up to one day. Stir before serving.
