Spirited Zabaglione
Ingredients
4 large egg yolks
5 Tbsp sugar
1/4 cup late-harvest wine (riesling, vidal, etc)
1 tsp lemon juice
1/4 tsp fresh thyme leaves, minced
Method/Steps
1. In the top of a double boiler, beat together egg yolks, sugar, wine, lemon juice and thyme.
2. Place double boiler top over simmering water. Whip mixture constantly with a wire whip or electric mixer until foam is just thick enough to briefly hold a peak , 5 to 6 minutes. volume should triple. Immediately pour zabaglione into 4 dessert goblets.
