Skate in Brown Butter
Ingredients
1 lb skate wings
1 litre water
3 Tb cider or wine vinegar
1 tsp salt
Brown Butter
1/4 cup butter
2 tsp cider or wine vinegar, or lemon juice
2 Tb each capers and parsley, chopped
salt and pepper
Method/Steps
Skate
1. In a large saucepan, combine water, vinegar and salt. Add more water if necessary to cover the wings. Bring the liquid to a boil.
2. Place wings in the liquid and poach them, simmering, until flesh is opaque and can be easily separated from the cartilage.
Brown Butter
1. In a small saucepan, melt butter over medium heat until golden brown. Add vinegar or lemon juice, capers and parsley. Stir. Season with salt and pepper. Spoon hot sauce over skate wings, and serve immediately.
