Shrimp, Peppers, Onions and, of course, Bacon
I always have a bag of frozen shrimp on hand for a quick weekday meal. You can vary this recipe by using whatever vegetables you have on hand. Just don’t forget the bacon!
Ingredients
8 slices bacon, cooked and drained (reserve 2 tbsp fat)
2 tbsp reserved bacon fat
1 sweet red bell pepper, sliced
1 medium onion, sliced
1 clove garlic, minced
1 pound shrimp, shelled, deveined and tails removed
Salt and pepper to taste
Method/Steps
In large skillet, heat bacon fat. Add red bell pepper and onion. Sauté until peppers are soft and onion is translucent.
Add garlic and cook one minute longer. Remove peppers and onion mixture and keep warm.
Add shrimp to skillet. Season with salt and pepper. Sauté until shrimp are cooked through, about 3 to 4 minutes per side.
Return peppers and onion mixture to the pan. Toss with cooked bacon. Serve with smashed redskin potatoes and steamed spinach.
