Sherry Carrots with Ginger
Ingredients
1-1/2 lbs carrots
2 Tbsp butter
1/2 cup crystallized ginger
3 Tbsp dry sherry
3 Tbsp water
1 tsp parsley, minced
Salt
Pepper
Method/Steps
1. Peel carrots and trim ends. Melt butter in a large frying pan over medium-high heat. Add carrots in a single layer and turn as needed until browned, 8-10 minutes.
2. Add ginger, sherry and water; stir, cover and reduce heat. Simmer until carrots are tender-crisp, about 5 minutes. Stir in parsley and season to taste with salt and pepper.
3. Arrange carrots on a platter. Scrape ginger mixture evenly over them.
