Scrambled Eggs with Salami and Onion
Ingredients
1/4 lb salami, cut into thin strips
1 onion, minced
2 Tbsp butter
10 eggs
1 Tbsp Dijon mustard
1 cup Cheddar cheese, shredded
Salt
Pepper
Method/Steps
1. In a large frying pan, stir salami and onion over medium-low heat until salami is browned and onion is golden and sweet, about 20 minutes. Add 2 Tbsp water to pan, stirring, to de-glaze pan. Remove salami and onion mixture to a bowl; keep warm.
2. Beat eggs to blend with mustard. Add butter to pan; melt. Pour egg mixture into the frying pan set over medium heat; sprinkle with 2/3 cup cheese and a pinch of salt. When edges begin to set, lift with spatula to let uncooked egg flow underneath; repeat until eggs are as set as you prefer.
3. Spoon eggs onto plates; top with warm salami mixture and remaining cheese. Serve with freshly ground pepper.
