Sausage and Green Pepper Pizza

4 cups tomato sauce

2 cups hickory or mesquite wood chips (optional)

Water

1 lb mild Italian sausage

Olive oil

1 Tbsp cornmeal

1 batch frozen pizza dough, thawed and rolled out

1/2 lb mozzarella cheese, shredded (more as needed)

1/2 small red onion, thinly sliced

12 green pepper, seeded and thinly sliced

1 cup basil leaves

 

Method/Steps

1. Heat tomato sauce.

2. Mix wood chips with about 2 cups warm water and let soak at least 30 minutes or up to 4 hours.

3. Peel the casing off the sausage and break the meat into bite-size pieces. Place pieces into a pan and cook until brown, about 15 minutes.

4. Ignite charcoal; when hot, spread the charcoal so that it lines the edges of the barbecue with no charcoal remaining in the centre. Cover barbecue and open vents to allow interior to warm up to about 400°F.

5. Oil a pizza pan. Sprinkle with cornmeal. Roll out dough on a lightly floured board. Lift dough into pan.

6. Spread tomato sauce evenly over the dough. Sprinkle mozzarella over the sauce. Top the cheese with sausage, onion and green pepper. Let stand until barbecue is ready.

7. Drain wood chips and sprinkle over the coals. Place pizza on the centre part of the grill, not directly over the charcoal. The pizza can be left in the pan to cook; or it can be lifted carefully out of the pan and placed directly on the coals. If you own any stone bakeware, you can place the stone on the grill and lay the pizza on the stone. Cover barbecue, and cook with vents open until crust is well browned on the bottom and cheese is melted, about 15 minutes. Remove from grill, top with basil leaves and cut into wedges.
