Salmon en Papillote
Adapted from A. Jan Howarth’s The Canadian Fish Cookbook.
Ingredients
6 salmon fillets or steaks
6 slices pancetta, chopped
4 tomatoes, peeled, seeded and sliced
1 onion, thinly sliced
1-1/2 cups potato, thinly sliced
1-1/2 cups green beans, sliced
Salt
PepperMethod/Steps
1. Prepare 6 pieces of aluminum foil. In the centre of each piece of foil, arrange an equal quantity of fish, pancetta, tomatoes, onion, potato and green beans. Sprinkle with salt and pepper. Wrap up each serving securely, sealing the foil well.
2. The fish may be cooked either on a barbecue or in the oven at 450°F for 15 to 20 minutes.
