Sage, Sausage and Spinach Pie
Ingredients
Pastry for one single-crust 9-inch pie
8 sausages, about 2/3 lbs total
1 onion, thinly sliced
1 Tbsp all-purpose flour
2 tsp dry sage
1-1/4 cups beef broth
2 potatoes, peeled and chopped
1 pkg (10 oz) frozen spinach, thawed, moisture squeezed out
Salt
Pepper
Method/Steps
1. Line a pie pan with pastry; set aside. In an large frying pan over medium-high heat, cook sausages, turning, until lightly browned, 10 minutes. Lift out sausages with a slotted spoon and let drain on paper towels.
2. Add onion to fat in pan; stir often until golden, 8 minutes. add flour and sage; stir for 30 seconds, then add stock and stir until bubbling. Remove from heat and gently stir in potatoes and spinach. Season to taste with salt and pepper.
3. Spoon spinach mixture into pie pan. Lay sausages on top of spinach. Bake in a 400°F oven until bubbling, about 40 minutes. Let pie cool on a rack for 10 minutes.
