Roasted Leg of Lamb

This dish has to be one of my favourites to make for company. Many people shy away from lamb because it can taste gamey. But, just one bite of this roast convinces them that lamb can be incredibly tender and flavourful.

1 5 lb leg of lamb

3 cloves of garlic

1 lemon, cut into slices

a handful of fresh mint leaves (optional)

2 sprigs of fresh rosemary

2 cups red wine

salt and pepper


Method/Steps

1. Add all ingredients, except wine, salt and pepper, to a roasting pan. Marinate overnight.

2. Heat oven to 450°F. Season well with salt and pepper. Turn the lamb so that the fat side is up. Pour wine into roasting pan. Place lamb in the oven, and reduce the temperature to 325°F. Roast for 30 minutes per pound, or until the internal temperature reaches 165°F (medium rare) to 180°F (well-done).

Lamb has a very slight gamey taste that works marvelously well with Pinotage or Zinfandel.
