2 heads of garlic

1 Tbsp olive oil

Method/Steps

Cut 2 large heads garlic in two crosswise about 1/3 from the root end. Pour 1 tablespoon of extra virgin olive oil in an 8 inch wide baking pan. Place garlic, cut side down, in the pan. Bake in a 350°F oven until the centre cloves are very soft when pressed and cut sides are browned, about 1 hour. Squeeze the whole head to force out the soft cloves or pluck them out with a fork.
