Roast Wild Boar
Ingredients
1 3-5 lb wild boar, shoulder cut
salt
pepper
4 cups red wine
2 cups beef stock
1 onion, cut into quarters
1 carrot, cut in half
2 potatoes, quartered
2 sprigs thyme
1 sprig rosemary
1 bay leaf
¼ cup olive oil
Method/Steps
1. Generously season the roast with salt and pepper. Heat the olive oil in a roasting pan, and sear the wild boar until brown.
2. Put all the remaining ingredients into the roasting pan with the wild boar. Cover, and let marinate in the fridge overnight.
3. Roast at 300°F for about 2 hours. Wild boar is cooked if it reaches an internal temperature of 185°F.
