Risotto with Truffles
Risotto is very easy to make. Give it a little attention as it simmers, and you’ll end up with a flavourful and enticing dish.
Ingredients
2 Tbsp olive oil
1/2 onion, chopped
1 clove garlic, minced
2 cups Arborio or Carnaroli rice
1/2 cup white wine
5 cups chicken or vegetable stock
1 Tbsp parsley, chopped
1/2 cup parmesan
salt
pepper
6 oz truffles, brushed clean
Method/Steps
1. Heat the olive oil in a pot. Add onion and garlic, and sauté over low heat for 5 minutes or until translucent.
2. Add rice, and stir. Pour in wine; stir and let it cook down until it has almost evaporated.
3. Add the chicken stock ½ cup at a time, stirring in between additions until most of the liquid has been absorbed. This whole process should take about 20 minutes.
4. Once cooked, remove from heat and add parsley and parmesan. Adjust seasoning. Garnish risotto with shaved truffle.
