Red Lettuce and Oranges
Ingredients
1 medium-size head red oak leaf, Boston red leaf or romaine red leaf lettuce, washed and torn into pieces
2 large oranges, peel and pith removed
1/2 tsp grated orange zest
1/4 cup mayonnaise
1 Tbsp sherry vinegar
2 tsp honey
Pepper
Method/Steps
1. Over a bowl, cut between orange membranes to remove orange sections. Squeeze membrane over bowl. Drain off all the juice and measure to get 3 Tbsp.
2. Whisk together the 3 Tbsp orange juice, orange zest, mayonnaise, vinegar and honey. Add pepper to taste.
3. Place torn lettuce leaves in a bowl and pour dressing over top. Mix gently. Distribute salad among 4 plates; top with orange segments.

Serve with a lovely French rosé.
