Red Cheese Spears

Ingredients

1/2 lb red Belgian endive, bases trimmed

5 oz goat cheese

3 Tbsp salted pistachios, chopped

Method/Steps

1. Trim base of endive heads to separate large outer leaves.

2. In the cup of each leaf, place about 1 tsp cheese. Sprinkle the nuts over the cheese and arrange leaves on a tray in a flower petal formation.

Wine and Spirits Match

A chilled glass of rosé would do the trick here.
