Red and Green Roll-Ups

2 cups broccoli florets

1 red bell pepper, rinsed, stemmed and seeded

4 green onions, chopped

8 oz cream cheese

1 Tbsp lemon juice

4 flour tortillas

3/4 cup feta cheese, finely crumbled

1/2 cup chopped fresh cilantro

1/2 cup chopped salted roasted almonds

Method/Steps

1. Cut broccoli, bell pepper and onions into chunks and chop in a food processor. Cut cream cheese into chunks and add to processor along with horseradish and lemon juice. Process just until ingredients are mixed, but not puréed.

2. Spread 1 side of each flour tortilla equally, to the edge, with the cheese mixture. Sprinkle each tortilla equally with feta, cilantro and almonds. Roll tortilla snugly around filling; set seam down.

3. Cut each roll crosswise into 6 equal pieces and set, cut edge down, on a platter.
