Ravioli with Walnut Sauce

1 cup unsalted walnuts, toasted if desired
 
4 tbsp extra-virgin olive oil
 
1 cup heavy cream
 
1 bag frozen cheese ravioli, cooked according to package directions and drained
 
Salt and pepper to taste
 
Pecorino Romano, shaved
 
Chopped fresh tomatoes

Method/Steps

Whirl the walnuts and olive oil in a food processor until mixture forms a paste. Mix the walnut paste and cream together.
 
Add a small amount of pasta cooking water if the consistency is too thick. Season with salt and pepper. Gently toss cooked ravioli with walnut sauce. Garnish with shaved Pecorino-Romano and chopped fresh tomatoes.
