Radicchio and Smoked Turkey Salad with Carpaccio Dressing
Carpaccio is paper-thin slices of beef dressed with olive oil, mustard, parmesan cheese and lime juice. It lends its fresh flavour to this smoked turkey salad.
Ingredients
Salad
1 bunch Romaine lettuce, washed and chopped
1 bunch radicchio, washed and chopped
1/4 cup green onions, thinly sliced
1/2 lb smoked turkey, thinly sliced
Carpaccio dressing (recipe follows)
Lime wedges
Salt
Pepper
Carpaccio Dressing
1/3 cup olive oil
2 Tbsp red wine vinegar
1 garlic clove, minced
1 tsp Dijon mustard
2 Tbsp grated parmesan cheese
Method/Steps
Salad
In a large bowl, combine Romaine, radicchio, green onions and smoked turkey. Pour carpaccio dressing over salad and mix lightly. Divide onto 4 dinner plates; garnish with lime wedges. Add salt and pepper to taste.
Carpaccio Dressing
Combine all ingredients in a small bowl until well blended.
