Pumpkin Crumble
Ingredients
1/2 cup sugar
1/2 cup dark brown sugar
1 Tbsp all-purpose flour
1-1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/4 tspground ginger
1 cup pumpkin
1 cup evaporated milk
2 large eggs, beaten
Walnut Cumble Topping
1/2 cup brown sugar
1/2 cup rolled oats
1/2 cup walnuts
1/4 cup all-purpose flour
1/4 cup butter
1/2 tsp each ground cinnamon and ground nutmeg
Method/Steps
For the Pie
1. In a bowl, mix sugar, brown sugar, flour, cinnamon, nutmeg, salt and ginger. Add pumpkin, milk and eggs; whisk until well combined.
2. Pour mixture into an unbaked 10-inch pie pastry. Sprinkle walnut crumble topping evenly over filling.
3. Bake on the bottom rack of a 375°F oven until centre barely jiggles when pan is gently shaken, 35 to 40 minutes. Cool completely before slicing.
Walnut Crumble Topping
1. In a bowl, combine brown sugar, rolled oats, walnuts, flour, butter, cinnamon and nutmet. Mix until crumbly.
