Prosciutto-Almond Asparagus
Ingredients
2 oz prosciutto, thinly sliced and cut into 1/2 inch wide strips
1 Tbsp olive oil
1/3 cup slivered almonds
3/4 cup orange juice
1/3 cup red wine vinegar
1 tsp cornstarch
1 tsp grated orange peel
2 lbw asparagus, tough ends removed

Method/Steps
1. In a large frying pan set over medium heat, stir prosciutto and oil until the meat is browned, about 4 minutes; set aside.
2. Add almonds to the pan. Stir until golden, about 2 minutes; set aside. Discard oil in the pan.
3. Stir juice, vinegar, cornstarch and orange peel until smooth. Pour into the pan; stir over high heat until bubbling, about 1 minute. Pour into a small bowl; keep hot.
4. Rinse pan. Place asparagus in the pan with 1/2 cup water. Cover tightly and simmer over medium heat until tender-crisp to the bits, about 3 minutes. Drain and arrange on a platter.
5. Pour orange sauce over asparagus, then scatter prosciutto and almonds on top. Season to taste with pepper.
