Poussins au sirop d’érable

Ingredients
2 broiler-fryer chickens
Flour
Salt
Pepper
4 tablespoons butter
2 large onions, thinly sliced
Pinch aniseed
Pinch savory
1/2 cup maple syrup
1/2 cup dry white wine
Method/Steps
1. Quarter the chickens. Roll each piece in flour, seasoned with salt and pepper.
2. Heat butter in large, heavy frying pan. Brown chicken pieces on both sides. Arrange in a single layer in large, shallow casserole.
3. Using pan drippings, brown onion slices briefly and arrange over chicken. Sprinkle with salt, pepper, aniseed, and savory. Drizzle maple syrup over all.
4. Deglaze frying pan with wine and pour over chicken.
5. Bake at 350 degrees F for 40 minutes, uncovered.

Serve with a chilled glass of Riesling.
