Pound Cake

The secret to this silky and light pound cake, courtesy of legourmettv , is the length of time you beat the butter.

3/4 pound cold butter, roughly cut up to give the mixer a head start.

1-1/3 cups sugar

1/4 tsp salt

5 eggs

6 Tbsp milk

1 tsp pure vanilla extract

1-1/2 cups flour (all purpose)

Method/Steps

Pre heat oven to 350º.

Butter 9x5 loaf pan and line bottom with parchment. Flour sides of pan.

Combine butter, sugar, salt in a stand mixer with the paddle attachment.

Beat on high speed for at least 8 minutes until light and fluff. If you're using a hand mixer, you'll have to run it for at least 15 minutes. Remember to scrape down the sides of the bowl regularly.

In another bowl, mix eggs, milk, and vanilla by hand. Make sure these are well combined.

With stand mixer on medium speed, slowly add egg / milk mixture; and continue to beat for about 2 minutes.

Turn off mixer and add all the flour in one go. Carefully mix flour in on low speed (10-15 seconds). Scrape down sides and repeat.

Place batter in pan, and bake for 75 minutes, or until tester comes out clean.

Turn out on a rack to cool.
