2 cups freshly mashed potatoes

1 cup choux pastry seasoned with nutmeg

vegetable oil

salt

Method/Steps

1. Stir the mashed potatoes into the choux pastry. Form the potato mixture into 1-inch balls, or insert the mixture into a pastry bag with a large tip.

2. Heat the oil to 350°F. Deep fry the balls 3 or 4 minutes, and allow the heat of the oil to increase to 370°F until the balls are golden. Drain on paper towels. Sprinkle with salt, and serve right away.
