Potato Dippers with Bacon and Sour Cream

It doesn’t get much better than this. Thick potato planks with a cup of bacon-flavoured dip. This is the dish to bring out whenever there’s a sports crowd at your home.

6 baking potatoes, cut into wedges

1/4 cup olive oil

1 tsp paprika

Salt & pepper to taste

6 bacon strips, cooked & minced

1 cup sour cream

1 tsp prepared horseradish, or to taste

3 scallions, minced

Method/Steps

Heat the oven to 400˚F.

Cut the potatoes into wedges.

In a large bowl, mix together the olive oil, paprika, salt and pepper. Add the potatoes and toss to coat.

Line a baking sheet with parchment paper. Spread the potatoes on the baking sheet.

Roast, uncovered for 20 minutes. Turn potatoes and roast another 20 to 30 minutes or until crispy on the outside and tender on the inside.

To make dip: In a medium bowl, mix bacon, sour cream, horseradish and scallions. Serve the potatoes with the dip.
