Potato and Avocado Salad with Ginger and Lime Dressing
Ingredients
2 lbs red-skinned potatoes, cleaned
1/2 cup green onion, thinly sliced
6 Tbsp lime juice
1 jalapeño chili, stemmed, seeded and minced
2 tsp fresh ginger, minced
1 Tbsp cilantro, chopped
1 avocado
Salt
Method/Steps
1. In a large pot, bring 2 litres water to a boil. Add potatoes; cover and simmer until tender, 15 - 20 minutes. Drain and let stand until cool enough to touch. Cut potatoes into quarters.
2. In a bowl, mix potatoes, onion, lime juice, chili, ginger and cilantro.
3. Peel, halve and pit avocado; cut into 1/2 inch cubes. Add avocado to potatoes and stir gently. Season to taste.
