Pesto
If the basil sprigs in the grocery store are looking a little tired, pick up a package or two anyway, and whip up some fresh pesto.
Ingredients
½ garlic clove
6 cups basil leaves
6 sprigs parsley (optional)
2 ½ cups grated parmesan
200 g pine nuts, toasted
1/8 tsp salt
1 cup olive oil, more or less depending on desired consistency
Method/Steps
1. In a food processor, or a large mortar and pestle, blend garlic, basil, parsley, cheese, nuts and salt until the mixture resembles a course paste.
2. Gradually add the oil until the mixture forms a smooth paste.
3. Taste and adjust the flavours if necessary.
