Pecan Wine Cookies
Ingredients
1/2 cup butter, softened
1/2 cup sugar
2 egg yolks
1/4 tsp grated lemon zest
1/4 tsp anise extract
4 tsp dry sherry
1 cup all-purpose flour
1 cup pecans, finely chopped
Method/Steps
1. Beat butter and sugar together until creamy.
2. Beat in egg yolks, lemon zest, anise extract and sherry until fluffy.
3. Add flour and 1/2 cup of the nuts. Blend until combined.
4. Mound remaining 1/2 cup nuts on a sheet of waxed paper. To shape each cookie, drop 1 tablespoon of dough into nuts and roll to coat evenly.
5. Put nut-covered pieces about 2 inches apart on a greased baking sheet. Flatten until about 1/4 inch thick. Bake in a 350°F oven until golden, about 25 minutes. Let cool, 1 minute. Transfer for rack to cool completely.
