Papaya and Portuguese Sausage Skewers
Ingredients
1 to 1-1/4 lbs Portuguese sausage (linguisa)
1 large firm-ripe papaya, peeled, seeded, and cut into 1-inch chunks
Lime wedgesMethod/Steps
1. Bring about 1-inch water to the boil in a large pan. Prick sausages all over with a fork, and add them to the water. Simmer until hot, 5-8 minutes.
2. On a thin wooden skewer, thread a piece of sausage, a piece of papaya and another piece of sausage; repeat for remaining skewers. Grill until meat is browned on both sides, about 5 minutes. Serve with lime to squeeze over each serving.
