Pan-Fried Rainbow Trout
Ingredients
6 rainbow trout
12 slices bacon
1 egg
1/4 cup milk
1 tsp salt
1/8 tsp pepper
1/2 cup flour
1/4 cup cornmeal
1 tsp paprika
Method/Steps
1. Rinse trout under cold running water and pat dry. Fry bacon until crisp, and remove from pan, reserving the bacon fat. keep the bacon warm in the oven.
2. In a bowl, beat the egg lightly, then add milk, salt and pepper. In another bowl, combine the flour, cornmeal and paprika.
3. Dip the fish first into the egg mixture, then coat it in the flour mixture. Fry in the hot reserved bacon fat for 2 to 3 minutes per side, or until the fish is golden brown. Drain on paper towels and garnish with the bacon.
