Oven Roasted Fries

You can vary the flavour of these delicious oven fries by varying the seasonings, but always add paprika to the mix as it helps to brown the potatoes.

5 large baking or PEI potatoes
 
olive oil, to taste
 
shredded parmesan cheese, to taste
 
paprika, oregano, sea salt and pepper, to taste

Method/Steps

Preheat oven to 450˚F.
 
Slice potatoes in half lengthwise. Then slice into quarters. 
 
In a bowl, whisk olive oil with cheese, paprika, oregano, sea salt and pepper. Toss potatoes in mixture.
 
Coat baking sheet with cooking spray. Pour potatoes with oil mixture onto baking sheet. Roast potatoes for 20 minutes. Using a spatula or tongs, flip each potato slice over. Roast for 15 to 20 minutes longer or until crisp on the outside and tender on the inside.

Serve with a Tuscan Chianti.
