Orzo with Mint and Tomatoes
Ingredients
2 onions, chopped
2 Tbsp olive oil
3 cups orzo pasta
1/2 cup chicken broth
1/3 cup lemon juice
1/4 cup parsley, minced
2 tomatoes, cored, seeded and hopped
1/2 cup fresh mint leaves, minced
Salt
Pepper
Method/Steps
1. Combine onions and oil in a large frying pan set over medium-high heat. Stir often until onions are golden and sweet, about 15 minutes.
2. Cook the orzo in a large pot of salted boiling water until tender, 6 to 8 minutes. Drain.
3. In a large bowl, mix together orzo, chopped onions, broth, lemon juice and minced parsley. Add tomatoes and mint just before serving. Season to taste with salt and pepper.
