Moose Meat, Sage and Wild Rice Patties
Thanks to Chef David Wolfman for providing this tasty recipe. You have to order moose meat about two weeks in advance from your butcher. If you're not able to find it, bison or beef make great substitutes.
Ingredients
1 lb moose, meat, ground
1 cup wild rice, cooked
2 Tbsp sage, chopped
1/2 cup onion, finely chopped
3 medium eggs, beaten
1/2 cup breadcrumbs
1 tsp chili flakes
4 cloves garlic, chopped
2 Tbsp vegetable oil
salt
pepper
Method/Steps
1. In a bowl, mix moose meat, wild rice, onion and garlic. Add chopped sage, chili flakes, salt, pepper and breadcrumbs. Stir in eggs. Mix well. Portion into six patties.
2. Place on an oiled baking sheet and bake at 350°F for 18 minutes.

Wine and Spirits Match
The fruitiness of Baco Noir would really bring out the sweetness of the burgers.
