Mocha Bites
Ingredients
Mocha Filling
1/2 cup whole blanced almonds
2 cups semisweet chocolate baking chips
2 Tbsp butter
1/2 cup sugar
2 Tbsp 35% cream
2 Tbsp coffee-flavoured liqueur
2 eggs
Mocha Crust (recipe below)
Crust
1-3/4 cups all-prupose flour
1/3 cup unsweetened cocoa
1/4 cup sugar
3/4 cup butter
1/3 cup chilled strong coffee
Method/Steps
Filling
1. Place almonds in a wide pan. Bake in a 350°F oven for 10 minutes, until slightly toasted. Let cool, then chop finely and set aside.
2. In a small pan, stir chocolate with butter over low heat until melted. In a large bowl, combine chocolate mixture, sugar, cream and liqueur until well blended; beat in eggs and almonds.
3. Fill each mocha crust-lined muffin cup equally with about 1 heaping teaspoon chocolate mixture.
4. Bake at 350°F until tops look dry, 20 minutes. Let cool.
Crust
1. Place all ingredients, except coffee, in the bowl of a food processor. Mix until the dough is a coarse meal.
2. Add coffee and stir until dough just holds together.
3. Divide dough into 4 pieces; wrap each piece in plastic film and chill.
4. Divide 1 piece of dough into 12 equal portions. Press each piece of dough over the bottom and up the sides of greased tiny muffin cups. Repeat with remaining dough.
