Microwave Polenta
Ingredients
1 cup water or chicken broth
1/4 cup yellow cornmeal
1 tsp butter
Salt (if using water)
Grated parmesan cheese
Method/Steps
1. In a l litre glass measuring cup, stir together the water, salt, cornmeal and butter. Cook, uncovered, in a microwave oven at full power, stirring once after 3 minutes, until polenta is tender and liquid is absorbed, about 7 minutes.
2. Spoon polenta onto plate and sprinkle with cheese.
