Jerk Drumsticks
This is a great dish to make when chicken drumsticks are on sale. It’s hot but sweet all at the same time. You can turn up the heat by adding additional cayenne pepper. Serve with black beans and rice.
Ingredients
8 chicken drumsticks
2 tbsp dried minced onion
2 1/2 tsp dried thyme
2 tsp ground allspice
1 tsp ground black pepper
1/2 tsp cinnamon
1/2 tsp cayenne pepper
1/2 tsp salt
1 tbsp Pick-a-Peppa sauce or other hot sauce
2 tbsp olive oil
Method/Steps
Preheat oven to 375˚F.
In a plastic bag, mix onion, thyme, allspice, black pepper, cinnamon, cayenne pepper and salt.
In a shallow bowl, mix together the hot sauce and olive oil.
Dip the chicken drumsticks into the hot sauce mixture, then shake in seasoning bag.
Cover a baking sheet with cooking spray or parchment paper and transfer the chicken drumsticks to the sheet.
Roast in 375˚ oven for 30 minutes. Turn drumsticks and roast for 20 – 30 minutes longer or until chicken is cooked through.
