2 lbs russet potatoes, peeled and thinly sliced

3 oz anchovy fillets

1 onion, chopped

1-2/3 cups 35% cream

2 Tbsp butter

2 Tbsp bread crumbs

Salt

Method/Steps

1. In a large casserole, layer the following ingredients in this order: 1/4 of the potatoes, 1/2 the anchovies, 1/2 the onions and 1/4 of the potatoes; add pinch of salt.

2. Pour cream over the ingredients; cover.

3. Bake in a 350°F oven until potatoes are tender to bite, about 1 hour. Cool, cover and chill. Dot potatoes with butter and crumbs. On the top rack of a 400°F oven, bake uncovered until hot and golden on top, about 30 minutes.

A chilled glass of Riesling would be very nice.
