Italian Couscous
Ingredients
3 Tbsp Bertolli Extra Virgin olive oil
2 cups onion, chopped
3 cloves garlic, minced
2 Tbsp balsamic vinegar
3 cups tomatoes, chopped
2 cups Knorr Chicken Broth
1 box whole wheat couscous (7 oz/298 g)
¼ cup fresh basil, finely chopped
1 Tbsp pine nuts, toasted
Method/Steps
1. In a large saucepan, heat the olive oil over medium heat.
2. Cook the onion 5 minutes or until tender. Stir in the garlic and cook 1 minute.
3. Stir in the vinegar, tomatoes and broth. Bring to a boil over high heat.
4. Stir in the couscous. Remove from heat, cover and let stand for 5 minutes.
5. Fluff with a fork. Stir in the basil and pine nuts and serve.
