Hazelnut Truffles
Ingredients
26 shelled hazelnuts
12 oz bittersweet chocolate, chopped
1/2 cup 35% cream
1/4 cup hazelnut or chocolate-flavoured liqueur
1/4 cup unsweetened cocoa
Method/Steps
1. Place hazelnuts in a wide pan. Bake in a 350°F oven until nuts are golden under skins, 10-12 minutes. Let cool.
2. In a small pan, stir chocolate and cream together over low heat until smooth and melted, 6 minutes. Stir in liqueur. Let cool, chill until firm enough to shape, about 1 hour.
3. Shape chocolate mixture into 1-1/4 inch balls; roll in cocoa to coat. Press a nut into each the top of each ball. Place the truffle in decorative paper cups; chill.
